概要：冬野菜はなぜ、寒さに強いのか、寒さが厳しくなるのにつれて甘くなるのかその仕組みについて、また、何故、落ち葉たい肥作りが重要なのか紹介します。教育農場からは、ハクサイの防寒、秋冬野菜の間引き、落ち葉たい肥作り、地域トッピクは2020年から大学に最も近い団地で活動しているエディブル・オーガニック・コミュニティガーデン多摩の取り組みについて消化します。
